Sink your teeth into a plate up sumptuous swordfish or dazzle your taste buds with a delicious sampling of the day's char-blackened Ahi tuna dishes drizzled in one of the best mango chutney sauces that you've ever experienced in your life.

And I haven't even gotten into all of the fabulous steak and rib options out there on St. Thomas (the island that I've dubbed to be the Mecca of delicious cuisine), and on top of that all of the sweet refreshing daiquiris and margaritas that you'll need to so often clear the palate before delving into the next delicious - and totally different - pan national cuisine favorite that one of the world-class chefs on the island of St. Thomas will be serving up to you here.

Well, in order to put this in another way, I'll just say that I have to hand it to you; you've chosen one of the best places in all of the U.S. Virgin Islands - and the greater Caribbean for that matter - to dine in style. The reason for St. Thomas's rapid ascendancy in the world of fine dining and elegant cuisine is based in a large part on the fact that so many people head here first when they come to the US Virgin Islands. After all, the main city here - Charlotte Amalie - is also the capital city of the U.S. Virgin Islands.

In addition, however, it is worth noting that the U.S. Virgin Islands are a major destination within the Caribbean by many cosmopolitan folks from the United States as well as from Europe. This type of tourist class with money to burn is well versed in what to look for when it comes to exceptional dining, and it therefore comes as no surprise that some of the best chefs from all over have made a point to set up shop in some of the exquisite dining locales that have popped up throughout this pleasure haven of a tropical island vacation destination.

If you are in St. Thomas for only one night, then I would highly recommend that you make a bee line toward the Hervé Restaurant & Wine Bar. Located smack dab in the center of all of the action, this fine dining destination features inside and outside seating, each with its special benefits, to some of the most top notch people on the island. Happily, however, the atmosphere is not stuffy, and the food will probably be some of the best you've ever tasted. Call these guys up at (340) 777-9703 to make your reservations.

You got an extra night to spare in St. Thomas, and you want to maintain that high class feel you experienced at the Hervé Restaurant & Wine Bar? Then head over to what I like to call the celebrity junction at the Tavern on the Waterfront - where the chances are that you'll run into a famous someone eating something good.

Another high class place to dine out at while staying on the beautiful island of St. Thomas is The Inn at Blackbeard's Castle. Perched high above and to the east of the capital city of Charlotte Amalie, it's the ambience alone here that will just knock the socks right off your feet. But you'll have to maintain yourself; The Inn at Blackbeard's Castle is best experienced with a special romantic date. So dress up good and prepare to dazzle (while being dazzled yourself). One last thing I should warn you about; the food here does not provide that tragic counterpoint to the great ambience. Instead, you should essentially prepare for an evening filled with endless amazement. Can you handle it?

One of the places to eat on this fabulous island that has grown on me and is now my personal favorite would have to be the Agavé Terrace. It's a high up location - romantic as well as group and family friendly - that will fill your ears with that paradisiacal tingling of the tropical island steal drum that is truly as beautiful as the seafood here is savory and delicious. Check out how they blacken the Ahi tuna, sear the Mahi Mahi and marinate the delectable crab meat. Well, I'm just going to have to say it; you've never tasted crab that's as good as it gets here. So I raise my glass: here's to hoping that crab is on the list of three "catches of the day" when you come visit the Agavé Terrace.

In addition, you may also wish to check out the raucous Duffy's Love Shack, the interesting soothing Robert's American Grille and the mother of all charm, Gladys's Café.
