Indeed, I was truly amazed at how one of St. Thomas' best fine dining locales, the Hervé Restaurant & Wine Bar, could be such a relaxing place to spend time. Unlike so many other Caribbean fine dining destinations that up the level of pretentiousness - along with the price - as if they are trying to prove something about their noble origins (and defy the lugubrious nature of their tropical island setting), the Hervé Restaurant & Wine Bar truly dispenses with all facades and instead appears to focus on creating a comfortable yet classy atmosphere, offering decent prices - really - and some of the most exquisite fine dining plates on the entire island of St. Thomas.

If this sounds like a tall order, then just see for yourself. This is exactly what I did, and in fact was essentially thrown into a state of ecstatic disbelief for the larger portion of my time spent at the Hervé Restaurant & Wine Bar. That's because the good just continued to get better, and I hardly had time to adjust to the shock of how well everything was going for me and my date to this exceptional fine dining locale. Not only was the selection of wines we were treated to initially some of the rarest and most upper crust of the possible selections out in the Caribbean, but the food just really knocked my socks off.

It must be the great foundation that this establishment is based upon. With lots of experience in the French restaurant industry, the founders of Hervé Restaurant & Wine Bar are carrying out to its highest potential the Midas' touch that they seem to wield like fire. With this in mind, it is easy to understand how it has come to pass that Hervé Restaurant & Wine Bar has quickly risen to the very top of all possible restaurants in St. Thomas.

On the menu is a fusion of French, Caribbean and American dishes that will impress not only you, but the fortunate entourage - or special someone - that accompanies you here. Choose from a fine selection of seafood and top-notch fruit chutney sauces that will make your palate have a party. There's also delicious duck and pasta options that will truly take you to another world. And don't forget dessert! It's delicious.
